Couple of notes on pan Dont use aluminium , copper or stainless steel is best or the jam will have a slightly metallic taste this is a KitchenAid large pan with handles they also do another in enamel coating which Im about to set on with a second batch If you don’t have a jam thermometer put two saucers in the freezer ( use this later to test if it’s setting I’ll tell you how ) Once the sugar has dissolved and you can’t feel any on bottom of pan grainy You can turn it up - we are heading for a rolling boil for 5-10 minutes with the cooking of the strawberries on the way Any large strawberries can be cut in half or however you like - sometimes i chop mine in to little 1cm sq bits if making less jam at a time Actually strawberries that are less ripe make a good jam as higher pectin but you can make a good saucy one with ones that have been put on sale just discard any mushy bits Keep brushing any sugar back into it with the pastry brush as it comes to the boil It will start to foam up dont be tempted to skim this off we will do that once later and add a little knob or two of butter to reduce the remainder Too much scraping off will reduce your jar total too much Btw your neighbours will be jealous it fills the air with a delicious aroma 🤣😍
