Modern Monk Style Congee
It's a little more dense with sweet dates and pumpkin seeds rather than Chinese jujubes and fox nuts (lotus seeds). I used hemp instead of walnut, added millet and used black soybeans rather than black beans. Super cheap and loaded with filling, digestible nutrition, protein, micronutrients, antioxidants, fiber, good fats, and sustained energy. It tastes surprisingly good on it's own but you could add all kinds of condiments if you want.
Shaolin Monks ate this "Eight Treasures Congee" for over 1500 years and you can see the nutrition is no joke.
