Itโ€™s also hardly just American. Congee is basically grits.

Sketchbook kinda day. Windy, not rare, I do love. Coffee, congee and muscle injury. Which means I will be spending this weekend writing the weird family saga #WIP about merciless matriarchs, and that's all I'm doing. Joy! #5amwritersclub #writingcommunity #amwriting #authorslife

Same exact basic concept: boiled grains. Grits, polenta, and oatmeal are all porridges. So is congee, which you'd probably most often find in asia (boiled rice). British porridge might be steel-cut oats, which will have a different texture from rolled oats.

Modern Monk Style Congee It's a little more dense with sweet dates and pumpkin seeds rather than Chinese jujubes and fox nuts (lotus seeds). I used hemp instead of walnut, added millet and used black soybeans rather than black beans. Super cheap and loaded with filling, digestible nutrition, protein, micronutrients, antioxidants, fiber, good fats, and sustained energy. It tastes surprisingly good on it's own but you could add all kinds of condiments if you want. Shaolin Monks ate this "Eight Treasures Congee" for over 1500 years and you can see the nutrition is no joke. 3T adzuki 3T mung 3T black soy 3T millet 3T sushi rice 1T black glutinous "forbidden" rice 1.5T black sesame 2T pumpkin seeds 9 chopped honey dates 2T goji berries 2T hemp 5C water soak beans overnight 40 minutes Instantpot on high, or boil for a 1-2 hours with a bit more water stir in goji and hemp

Everyone is. Oatmeal, cereal, congee, polenta, rice porridge. That's why I think it's weird to call *grits* poverty food, when it's as elevated as people make it

[Late night bite: steaming bowl of fish congee, soft tofu cubes, and a side of pickled radish. Perfect quiet comfort after a long day. ]

You don't get them at many restaurants because porridge is mild food cooked at home. Not just grits, oatmeal, congee, even polenta.
