The actual degree to which you add things is necessary to make something fair use isn't fixed and has to be determined case-by-case in the law.
Obviously, slapping your watermark over their work isn't transformative.

It depends. There is no fine line where it jumps to legal transformation.
The more of the original content you use the less likely it is to be fair use, but it depends on how it is altered/added to, the purpose of the transformation and how it relates to the originals' market.

VTH had a lot to say on the Tiffany video since he does ancestry research for people.
If you have something to say that adds additional value within fair use I don't think you have a moral obligation to ask. We wouldn't expect film critics to ask film makers.
