I had a very important lesson hammered home tonight.
I have had an incredibly busy, but productive day. I am very tired. But I thought to myself, "I don't want to be lazy and get fast food, I'll make something quick and easy."
I had some left-over chicken breast in the fridge. I needed ice anyway. So I swung by the store, grabbed some fresh pasta, my ice, and a couple other things including a BEAUTIFUL loaf of garlic sourdough.
I get home and start cooking. I'm making Aglio e Olio with some chicken breast and pan fried zucchini. Easy peasy. I slice the fresh garlic super thin to fry up with the zucchini. Everything smells amazing. I get everything cooked up, the bread is toasted and finished with a Sicillian Garlic olive oil. The pasta just needs to be drained...
I dump the entire pot into the sink. All the pasta ruined. I let out a few loud expletives. Still angry I look on the bright side. I have extra pasta in the pantry. I go looking. I find a box of rotini. I take the box out. Someone has already used part of the box and put the box back in the panty with the open side away from the door. I dump half THAT box on the floor.
More expletives.
I finally finish cooking the new batch of pasta. I drain it EXTRA CAREFULLY. I finally put every thing together. Finish with grated Parmesan cheese.
Everything tastes amazing.
It was supposed to be a quick, easy dinner that ended up taking much longer than planned.
The lesson here being that even though it took much longer than expected, and it doesn't look like I initially planned, it is still a beautiful and fulfilling experience.
Wherever you are in life, my beautiful friends, even if it isn't where you expected to be, a beautiful thing can be just around the corner.
