That only applies to non-Kitabi men. Muhammad’s own daughter was married to Kitabi, upon her embrace of Islam the marriage was not dissolved, instead she remained married until he converted; she didn’t have to remarry him. Prohibition of Muslim woman marrying Kitabi is innovation

Further, Ulama stated when Muslim & Kitabi marry, their kids must be raised in religion of the parent with the better religion (i.e. Islam), meaning the mother could also be the one that is the Muslim in the mixed-marriage, otherwise it would’ve stated the religion of the father!
