ALT Collage of different dishes from around the world, as they are being prepared and served. The centre of the collage includes the following text: “MultakaOxford Recipes from around the world”.
ALT Large dish of fatteh, topped with chickpeas, fried bread, and nuts. Text: “Fatteh with chickpeas: Fatteh is a well-known Middle Eastern dish enjoyed in countries such as Lebanon, Syria, Palestine, Jordan, and Egypt, with each region having its own variation. The word fatteh comes from the Arabic word meaning ‘to crumble’ or ‘to break apart,’ referring to the pieces of toasted or fried bread layered into the dish. Fatteh with chickpeas is especially popular in the Levant and is often made with chickpeas, yoghurt, tahini, garlic, and crispy bread, the topped with nuts and herbs. It is loved for its contrast of textures and rich flavour, and it is often served as a comforting family meal or as part of a larger spread”. In the background, there is a graphic of Islamic-inspired mosaics and tiles.
ALT Two people preparing fatteh. One person is adding the garnish on top while another is holding a spoon over a metal bowl. Text: “Ingredients: 2 cups cooked chickpeas, 3 medium pita breads, toasted or friends and broken into pieces, 2 cups plain yoghurt, 2 tablespoons tahini, 2 cloves garlic, crushed, 2 tablespoons lemon juice, 1 teaspoon salt, ½ teaspoon black pepper, 2 tablespoons olive oil or melted butter, 2 tablespoons pine nuts or chopped almonds for garnish, 2 tablespoons chopped parsley for garnish”. The text is framed by graphics that resemble Islamic tiles or mosaics.
ALT Text: “Method: Toast pine nuts in a dry pan until golden. Set aside. Cut pitta bread into small pieces and toast or fry until crispy. Mash garlic into yogurt, mix with tahini, olive oil, cumin, and salt. Layer toasted pita in a serving dish, then chickpeas, then yogurt sauce. Drizzle with olive oil and sprinkle toasted pine nuts on top” Below the text, there is a collage of people preparing the fatteh. One photo shows a close-up of the bread being toasted, another shows three people preparing the fatteh, and the other two shows a person adding the garnish to the fatteh with a spoon. The text and photos are framed by graphics that resemble Islamic tiles or mosaics.
