Choice to select spread doubled in 5 days. june 5 it was $10 a hundredweight, june 10 hit $17.58. thats the premium you pay for the grade. packers bidding it up means Choice beef is getting scarce, and that scarcity shows up at your counter not theirs.

Pulled into a town where the only things open were a gas station and a Dollar General. by 10 we had a line longer than both. lady said you gave this place its meat counter back for a day. didnt know what to say so i just kept bagging.

Everybody treats frozen like a downgrade. for a meat company its the actual edge. no spoilage clock, no markdown bin, beef frozen at peak holds better than what sat sweating in a grocery case 5 days. fresh is a marketing word, frozen is the business.

1/7 We give away a full box of beef when you sign up. people hear that and assume were losing our shirts on it. the math actually runs the other way, and it took me longer than id like to admit to see why.

6/7 The part that took me too long to learn, a freezer is a commitment device. once someone clears a shelf for your beef, they think about you at dinner. an ad gets forgotten in 3 seconds, a stocked freezer hangs around for weeks.

7/7 So the free box isnt charity and its not some loss leader trick. its the cheapest honest way ive found to earn a first yes. turns out handing people the actual thing beats handing them reasons to believe in it.

Everybody wants to know which ad made the sale. but the freezer sold itself the second somebody saw 20lbs of beef stacked up in a parking lot. the truck IS the ad. you cant put a tracking link on a guy telling his neighbor where to go.

Nobody posts the teardown. lot's empty, generator still humming, shirt stuck to your back in 90 degree heat while you stack coolers that weighed a lot less full. 4 towns this week. loaded the last empty one and sat on the tailgate a minute before the 3 hour drive home.

Cattle futures hit 253 this spring, cash steers over 248, both records. US herd is the smallest since the 1950s. anybody waiting on beef to get cheap again at the counter is waiting years. you dont rebuild a cattle herd in a quarter. this is the new floor, not a spike.

Drove 5 hours to a town of 2,200 last week and sold the freezer down in under 2. old rancher on his way out told me his own cattle ship to a packer 300 miles off then come back to his store marked up triple. he bought a box from us anyway. still thinking about that one.

Everybody talks CAC like its just a digital number. a facebook click costs me more every year and converts worse. meanwhile a guy buys off the truck, tastes it, tells 3 neighbors that weekend. that referral never shows up in anybody's dashboard.

You the meat truck my barber wont shut up about? yeah thats us. one guy talks at the shop and half a town of 4,000 knows the name before we even park. cheapest marketing there is, somebody elses haircut.

rib primal hit $580 a hundredweight this week per USDA. chuck roast same week, $333. one cow, almost double the price between two of its own cuts. the cheap end aint lower quality, its just less famous. learn to cook a chuck and you eat like a king for half the money.

Closed Brookshires on the edge of town, grocery shut down a couple years back, sign still hanging faded. we set up in the dirt lot behind it and ended up parked on the far side of the same wall their meat counter used to sit behind. didnt plan it. stuck with me.

everybody asks what our best marketing channel is. honest answer is i cant fully tell you. guy buys a box at the truck after seeing us on here 3 weeks back, then his buddy texts him we're in town. that sale logs as walk up. attribution is mostly a story you tell yourself.

You ever watch someone do freezer math in real time? lady today stood in the lot counting packs against what she already had at home, kid on her hip. bought the box. said this gets us to payday without a grocery run. town of maybe 2,500.
