What a great question! I think it's probably intended to work on zombies explicitly created with the animate dead spell but looking at the text of dispel magic (theme plays) again, it kind of seems like it would apply to any creature who's existence depends on magic.

You throw coins at your enemies, pelting them with precious metals and the bitter sting of humiliation. Each creature in a 15 foot cone must make a Dexterity saving throw. On a failure, they take bludgeoning damage equal to the gp value of the coins used as a material component for this spell (maximum 10). On a success, they take half as much damage.
After you cast this spell, the coins used as the material component are scattered about on the ground within the cone’s area.
At Higher Levels. When you cast this spell using a spell slot of 2nd level, the maximum damage that can be dealt by this spell increases by 10 for each slot level above 1st.
