Thanks for the help everyone. It seems normally they use the VP9 (best) or AV1 (medium) codec on my videos. Today they used AVC1 (fast but bad) probably because the servers couldn't keep up.

Anyone know if YouTube is having compression issues lately? I haven't changed any settings but it seems to be getting worse for me.
