My biggest challenge in this business is being a stickler, I’d rather do everything myself than let someone else do it. My mom has been urging me to distribute tasks among the women in our area who sometimes help her, but I just can’t. Aside from ensuring hygiene, I fear they’d make a mistake that could ruin everything. I’d rather blame myself for my mistakes than have someone else make them for me😂
I set a timer for everything I do, from soaking to cooking. Even taking it to the processing machine, I could ask my brother, but I’d rather go myself, give instructions on what to grind first and how long to avoid over processing or heating. The only thing I let someone do is removing the pits from dates, I give that to our youngest because she can easily crack them open with a mortar and pestle and gets to eat the moist ones😂 That’s how I’ve been single handedly doing it all. I don’t know if I’ll get used to it but I need to do something before I break down, I’ve never been this stressed in my 20 years of living.
