PSA, the Switch OS 19 update that causes issues with GameCube adapters is not isolated to GameCube adapters. ProGCC, Hori controllers, and official Pro Controller (Via USB tap) have the same problem.
Please wait for an official fix from Nintendo, or be sure to reboot often.
