Are you not a fan of the newer Windows 11 25H2 Start Menu. Well we used to be able to revert it back to the 24H2 style but now that has been blocked by Microsoft. You can still customize or tweak the Windows 11 Start Menu to better suit your needs.

Wth the PowerToys Workspaces feature you can save the state of your desktop in regard to what apps are open and their positions. All you need to do is then click your Workspace shortcut and have everything restored to the way it was when you saved it.
