✅ Romanian Ciorbă de Păstăi Recipe
(Green Bean Soup with Smoked Pork & Sour Cream)
Ingredients (Serves 6)
• 500g fresh or frozen green beans (păstăi), cut into pieces
• 400–500g smoked pork (ribs, ham hock, or smoked bacon), cut into chunks
• 1 large onion, chopped
• 2 carrots, diced
• 1 red bell pepper, diced (optional)
• 2–3 potatoes, cubed (optional)
• 2 tbsp vegetable oil or lard
• 1.5–2 liters water or stock
• 2–3 tbsp tomato paste
• 1–2 tbsp vinegar or lemon juice (for slight tang)
• 200–250g sour cream (smântână)
• Fresh dill parsley, chopped
• Salt & pepper to taste
• Optional: 1–2 garlic cloves, minced
Instructions:
1. In a large pot, heat oil and sauté the onion, carrot, and pepper for 5 minutes.
2. Add the smoked pork pieces and cook for another 5 minutes.
3. Add green beans, potatoes (if using), tomato paste, salt, pepper, and enough water to cover everything.
4. Bring to a boil, then simmer on low heat for 45–60 minutes until the beans and meat are tender.
5. In a bowl, mix sour cream with a ladle of hot soup (to temper it), then stir it back into the pot. Add vinegar/lemon juice to taste.
6. Simmer 5 more minutes. Turn off heat and add plenty of fresh dill and parsley.
