This is a pretty reasonable question!
Two reasons:
1) You’re not going to get enough blood just poking tissues/tiny capillaries
2) The chemistry inside cells is different than in the blood. You need to minimize the contents from cells in your sample to get an accurate reading
Medical people, I have a question. Don’t be angry please
When taking blood for tests, why must you look for veins? If you chook the needle anywhere, blood will definitely come out. Why must you look for a vein?

People are so weird about meat
Rare is the only correct way to eat a steak.
Medium rare gets a pass because I’m not completely unreasonable.
But once you get past that, I don’t know what we’re doing anymore. You paid for steak just to cook all the joy out of it.
