Our flagship has been refined and obsessively crafted from our barn in Brimfield to our brewery in Monson, and now on our dialed brewhouse in Charlton. It is the heartbeat of our brewery and is always in a brite tank, fermentor, or making its way across the brewdeck from vessel to vessel. This rendition amplifies its character without sacrificing any of the qualities we love about it: balanced bitterness, pleasant malt character, and juicy tropical notes rendered in 3D. A very special little piece of imagination from the Tree House cellar today in Charlton: Dreamer Coconut Cask - A vibrant twist on tradition! ๐ŸŒŒ๐ŸŒ™๐Ÿฅฅ๐ŸŒ We took our hefeweizen, Dreamer, which offers soft notes of banana and clove above its silky wheat body, and conditioned it on toasted coconut. It's an unlikely pairing that feels completely natural once you taste it. The coconut's warm, nutty sweetness intertwines with Dreamer's banana character, evoking fresh banana bread, tropical pastries, and toasted coconut macaroons. What a perfect day to enjoy it while it lasts!

The Method is a Triple IPA that pours a glowing orange hue into the glass. Utilizing potent hop extracts alongside Nelson, Peacharine, and Cascade, it fills the air with notes of ripe peach, lychee, passionfruit sorbet, and citrus candies. Our fluency in brewing Triple IPAs has reached a point where we felt comfortable incorporating some of the industry's most cutting-edge hop products into these already intensely hop-charged beers. Alongside our dry-hop regimen, we used two hop kief extracts: Kohia Motueka, a lupulin-rich blend with dried passionfruit, and Maui Nelson, enhanced with pineapple extract. Together, they create waves of tropical intensity while contributing virtually no bitterness, essentially sending our pounds-per-barrel rate into the stratosphere. There's a certain magic in watching a new skill become second nature. Whether it's developing a recipe, finding the rhythm of our fingers while knitting, or untangling the chaos of a machine we've decided to repair ourselves, it's exhausting being a novice. But slowly, your muscles learn the steps and your mind settles into a flow state. Before long, you're as fast as you are precise. The method.

First there was good nut; now there's great nut. House-toasted coconut ftw. ๐Ÿฅฅ We take our juicy Double IPA, Perfect Storm, and condition it on mounds of toasted coconut to add a creamy texture and layers of coconut macaroon character. This beer pairs exceptionally well with tropical adjuncts. Citra provides bright citrus notes, while Simcoe delivers a myriad of tropical fruit aromas before finishing with a resinous, piney quality. That firm hop character balances additions like fruit juice or creamy coconut, creating a rich yet refreshing drinking experience.

Ultimate Haze is a reflection of brewing and hop-sourcing efforts that stretch the better part of fifteen years. It bursts with overripe peach nectar, pulpy orange juice, and the most delectable fruit cocktail you've ever tasted, all harmoniously intertwined. Originally brewed for our Anniversary Week in 2024, this beer took Haze into the realm of Triple IPAs: carefully, thoughtfully, and with an exacting methodology. It's the culmination of over a decade of obsessively crafting a beer a thousand times over and incorporating techniques from more recent fascinations. When we first amplify a style, it puts the original into sharper focus. Certain notes jump out, reminding us of the first time we experienced the beer.

Campfire beers ๐Ÿ”ฅ๐Ÿบ๐Ÿ•๏ธ Sticks is our Sticke Altbier, a traditional ale hailing from Dรผsseldorf, Germany. Pouring a deep amber hue with a creamy head, it has a complex grain bill lending notes of toasted bread crust, figs, roasted nuts, and knotweed honey. Spalt hops add assertive bitterness and earthy, noble-spice aromas that linger through its malty finish. This rather rare style carries its history within its name. The โ€œaltโ€ in this styleโ€™s family tree - meaning โ€œoldโ€ - refers to the fact that it is an ale, one of the few that endured over hundreds of years, as Germanyโ€™s became a powerhouse of lager production. โ€œStickeโ€ is derived from the local dialect of Dรผsseldorf and means โ€œsecret.โ€ These beers were often stronger versions brewed for seasonal celebrations or offered as off-menu pours for brewers and their favorite patrons. While summer certainly belongs to lagers, when the sun sets we crave something stronger to stoke the campfire, yet still effortlessly drinkable. Sticks was conditioned for an extended period, and its natural carbonation brings a wonderful softness to its rich malt character. Our friend @telepathdesign captured the mood on this can of how it feels to slip into the darkness, gathering fuel for a toasty campfire.

The rarest of all hat tricks - the June Stout Hat Trick - is complete! Hold On to Sunshine is one of our favorite Milk Stouts, brewed with gobs of peanut butter, a rich, chocolatey grain bill, cacao nibs, and conditioned on house-roasted coffee. The intersection of peanut butter and coffee roast is one of those flavor combinations that seems obvious in hindsight. Both are so familiar, so woven into our everyday routines, that it's easy to miss how naturally they complement one another. Layered atop a fluffy mouthfeel, the pairing creates a beer that is deeply decadent yet remarkably easy to drink. Whether life gives you lemons or life gives you juicy sweet peaches, it's paramount to Hold On To Sunshine.

Moment of Clarity is an American Milk Stout carefully brewed and conditioned with coffee, chocolate, and dark amber maple syrup. If you're from New England, your cupboard or fridge probably has a bottle of real maple syrup, and if you're lucky enough, a friend may even go through the trouble of making their own. The real stuff is so good, I think we can all admit we've taken a sip straight from the bottle. This beer is dedicated to that post-chocolate-chip-pancake urge, but in beer form. Maple aroma wafts from the glass, while its fluffy, drinkable body makes for an easy sipper rather than a syrupy dessert stout.

๐Ÿซ๐Ÿฅ›๐ŸคŽ Chocolate, thankfully, doesn't have a season, at least not in our books. We brew this beer with cacao nibs and chocolate-forward roasts provided by our coffee team. It carries notes of mocha lattes, melted chocolate bars, and cocoa-dusted French truffles. The reason this beer carries such decadence at an approachable ABV is that lactose sugars are virtually non-fermentable by brewer's yeast. The malt sugars attenuate while this extra layer of silky texture and flavor remains, folding wonderfully into some of our favorite adjuncts. What a treat.
