Citric acid and sodium citrate are commonly produced through a fermentation process using black mold. It's in food including products advertised as healthy alternatives, shampoos, hand sanitizers, just discovered sodium citrate listed as an ingredient in my laundry detergent.
More common ingredients produced using the mold Aspergillus Niger: amylase, pectinase, and protease (are sometimes listed in ingredients as "enzymes" or "microbial enzymes", which in itself raises an eyebrow. like, why ya hiding it)
