Ingredients
- 12 oz fettuccine
- 1 can (15 oz) cannellini (white) beans, drained rinsed
- 1/2 cup heavy cream (half the usual — the beans replace the rest)
- 3 cloves garlic, minced
- 2 tbsp butter
- 3/4 cup grated parmesan
- 1/2 cup reserved pasta water
- salt cracked black pepper, chopped parsley
Method
1. Boil fettuccine in salted water; reserve 1/2 cup pasta water before draining.
2. Blend the cannellini beans with the 1/2 cup cream ( a splash of pasta water) until completely smooth — this is your creamy base.
3. Melt butter, sauté garlic ~1 min until fragrant.
4. Pour in the bean-cream blend, loosen with pasta water, simmer 2–3 min.
5. Stir in parmesan until melted; season with salt pepper.
6. Toss the drained pasta through, adding pasta water until silky. Finish with parsley cracked pepper.
