š Baked Cod and Asparagus with Garlic Lemon Caper Sauce
Ingredients:
- 4 cod fillets
- 1 bunch asparagus, trimmed
- 2 tbsp olive oil
- Salt and pepper to taste
For the Garlic Lemon Caper Sauce:
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 2 tbsp capers, drained
- 1/4 cup lemon juice (freshly squeezed)
- 1 tsp lemon zest
- 1/2 tsp dried thyme
- 1/4 cup fresh parsley, chopped
Instructions:
1. Prepare the Cod and Asparagus:
- Preheat the oven to 400°F (200°C).
- Place the cod fillets and asparagus on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Bake for 12-15 minutes, until the cod flakes easily with a fork and the asparagus is tender.
2. Make the Garlic Lemon Caper Sauce:
- In a small pan, heat 2 tablespoons of olive oil over medium heat.
- Add minced garlic and sautƩ for 1 minute, until fragrant.
- Stir in the capers, lemon juice, lemon zest, and dried thyme. Cook for another 2-3 minutes to allow the flavors to combine.
- Remove from heat and stir in fresh parsley.
3. Serve:
- Plate the baked cod and asparagus, then drizzle the garlic lemon caper sauce over the top.
- Garnish with additional parsley if desired, and serve warm.
