Exciting news! My segment on Daytime with Maggie Rodriguez on WFLA Channel 8 aired today, and I’m thrilled to share it with you. Thank you Maggie for having me on the show to talk about one of my favorite traditional kitchen skills — turning fruit scraps into homemade vinegar!
If you’ve never made fruit scrap vinegar before, it’s incredibly simple and a wonderful way to reduce waste while creating something delicious for your kitchen.

Here are the quick steps to make your own fruit scrap vinegar at home:
🥭 1. Save your fruit scraps
Peels, pits, and leftover pieces from fruits like mango, apple, pineapple, or berries all work beautifully.
🍯 2. Add to a jar with sugar water
Place scraps in a clean jar and cover with water mixed with a little sugar (about 1 tablespoon per cup of water). Stir well.
🫙 3. Cover and ferment
Cover loosely with cloth (or a coffee filter and rubber band) and let sit at room temperature, stirring daily. After about 7–10 days, you’ll notice fermentation happening.
🍶 4. Strain the scraps
Once it smells pleasantly fruity and slightly tangy, strain out the fruit solids.
⏳ 5. Ferment again (this step didn’t make the segment!)
Return the liquid to the jar and allow it to sit another 3–4 weeks until it transforms into vinegar.
You’ll know it’s ready when it smells bright and vinegary!
This simple traditional process creates a beautiful homemade vinegar perfect for dressings, marinades, shrubs, and tonics.
