The Ingredients:

French Toast: 400g brioche loaf (uncut), 3 eggs, 1 tsp cinnamon, ½ tbsp packed light brown soft sugar, 2 tsp pure vanilla extract, 250ml evaporated milk, and 3 tbsp butter.
Vanilla Whip: 250ml cold double cream, 30g collagen, 1 tbsp caster sugar, and 1 vanilla bean.
Toppings: 30g toasted coconut flakes.
Method:
Whisk the sauce ingredients together and set aside.
Soak thick slices of brioche in a custard made of eggs, cinnamon, brown sugar, vanilla, and evaporated milk.
Fry in butter until golden and finish in a preheated oven (190°C/375°F) for 7-10 minutes.
Whip the cream, collagen, sugar, and vanilla bean until you reach your desired peak consistency.
Assemble by drizzling with sauce, dolloping the whip, and adding a sprinkle of toasted coconut.
