Here i tried to debunk desi misunderstanding of food vocabulary, a very hot topic in health & nutrition.
Processed, Chemical, Artificial & Additives
Vs
All Natural or Organic
'Food has chemicals' is a lazy and funny argument. All food is chemical.
Water is made up of chemicals. Salt is sodium chloride. Sugar is sucrose/glucose/fructose. Protein is amino acids. Fat is fatty acids. Elaichi, pepper, garlic, ginger, curry leaves, all are 'chemicals'.
'Natural' vs 'artificial' is also an ancient argument. Most vegetables we eat exist today are domesticated versions shaped by humans using science, biotechnology, selective breeding over centuries.
Food is 'processed' is another not so nuanced claim. Almost all food is processed or has ingredients which are the result of processing. Where processing could also mean cooking, fermenting, grinding, extracting, preserving, or packaging it. One can definitely argue for less processing vs ultra industrial processing. Paneer, ghee, Batter, Pickles, Papad, Bread all are processed food. Yes they are often not ultra processed. Store bought paneer may even go through industrial processing. Whey protein is the result of selective processing and filtering for protein from milk. It would be naive to call paneer as natural and whey protein as artificial and processed. Natural bol ke you can not be eating bhut jolokia ke pakode all day. You eat based on what suits you and your chemistry.
Another one is the term 'additive'. Upar se daala hai. We can raise questions, if the additive is purely for texture, flavor, color and addiction, and if harmful. If we talk about additives, salt, vinegar, baking soda, yeast, hing all are additives or ingredients depending on usage.
If you understand your food you feel safe but if it sounds like 'ascorbic acid' , you feel unsafe. It's only that human and especially desi understanding of food and nutrition science is evolving, so we now know to look at our food with the lens of 'Modern Science'.
fought a nutritionist today because she told my mom Idlis are a good source of protein & whey is “processed & harmful”, it’s taken me so much time & energy to get my (vegetarian) parents to eat protein consistently and miss ma’am walks in to undo everything in 2 mins. picking my battles as I grow up & this was worth it.
