You can use DFU anytime you lose possession of your phone or don’t trust it for any reason.

You can restore data from encrypted back ups. Do not erase old phone until you make sure all MFA items are transferred to new phone.

DFU will erase all firmware and reload signed software. This ensures there is no middle supply hi-jacking or tampering with the OS.
