Continuing this proud legacy, Quicke's crafts its renowned clothbound cheddar meticulously, using grass-fed milk from the farm, time-honoured recipes, and heritage techniques passed down through generations. 🐄
To mature the cheeses, they are carefully placed in traditional wooden racks within the "nursery store." After about three months, they move to Quicke's "Cathedral of Cheese," where they continue to age. The clothbound truckles are turned every ten days, ensuring an even texture as they mature for up to two years. 🕰️
Within the cool, dim confines of this cheese sanctuary, each rind develops a unique texture and colour, ranging from camo-green to vibrant orange. The clothbound cheese fosters a distinctive mould garden, infusing a rich horseradish flavour beneath the rind—a hallmark of Quicke's cheese. It is during this maturation process that a diverse array of flavours emerges, from the creamy freshness of Quicke's Buttery Clothbound Cheddar to the satisfying complexity of Quicke's Vintage Clothbound Cheddar. 🧀
Today, in a close partnership, Somerdale and Quicke's collaborate to bring some of the finest traditional clothbound cheddars to customers worldwide. 🐄
