Here’s a twist on your standard meatballs… no frying involved, super healthy being high in protein using low fat turkey mince from @morrisons and minimal fuss, these flavour bursting meatballs are baked until golden and come together so quick.

TUNA TARTAR WITH WONTON CRISPS - Can every Tuesday be tuna tartare day please??? There’s something about the crunch of these wonton chips with fresh tuna in that creamy, spicy, sesame sauce that is just soooo addictive!!!

Roasted Butternut & Prosciutto Salad - I made this salad a few weeks ago for my family who were visiting and served it with a curry leaf butter roast chicken… they all LOVED it… surprisingly even the ones that don’t really like butternut squash enjoyed it!

I fancied “sukiyaki”… Japanese saucy sweet noods typically served with beef, tofu and veg… BUT I had no beef and very little time to make dinner so came up with this veggie version which….whoop whoop…. cravings satisfied and was DEEEELISH!

The base is a rich tomato broth simmered with nutty chickpeas and bites of spicy chorizo sausage,the calamari adds a gorgeous tender texture and each bite is just bursting with flavour. A family style one pot wonder! Pass the crusty bread and dig in!!

Charred pieces of meaty chipotle lime marinated monkfish… paired with a spicy guac, sweet mango salsa and crispy corn kernels all wrapped up a hot corn taco…. COME TO MAMA!! This combo was off the charts yum!!

Need a healthier crisp alternative?? I think we all do!! These little baked bites of deliciousness are sooooo more-ish.. the perfect nibble to have with a chilled glass of vino.. crunchy on the outside and soft on the inside then dipped into a spicy tomato sauce.

A fridge raid salad at its best! Yes peeps… such an easy one to make… my veggies are always roasted to perfection in the air fryer, then whip up the dressing with some mashed roasted garlic… give it all a toss, crumble on the feta and voila… pure deliciousness!!

They are surprisingly easy to cook when you roast them, I used my garlicky curry leaf butter and finished them with a curry leaf parmesan crumb… gotto say I was soooo pleased with how they turned out!

The yummiest and most gorgeous spread, kindly gifted to me from the lovely folks @Ottolenghi. It was such a pleasure not having to cook in this heat… we thoroughly enjoyed each mouthful and were literally licking the plates clean.

Flip over the crunchy golden pastry revealing that oozy, spicy, Bombay sandwich filling inside, lashings of spicy green chutney, red onions, tomatoes, potatoes and cheese… damn these were good!!

Quality pork sausage with golden buttered roasties slathered with the most flavour bursting curry leaf garlic butter… fennel and shallot wedges along with some long sweet pointy peppers… so easy and delicious and all in one tray ready in only 40 mins too!

These tinned sardines from Portugal were not fishy at all… they were soft, rich and salty so pairing them with sweet juicy tomatoes and fresh zingy ingredients complimented them beautifully. This entire dish takes 20 minutes to make!
