1/4 Kevin at Hopton’s sourced a lovely piece of Beef for us at the weekend. A joint called Thor’s Hammer. It’s Beef Shin on the Bone (apologies in advance to the vegetarians and vegans!) so needs long and slow cooking, and is often used for smoking.
