Incredible evening Colletts Farm for their 5 course feast in a field, cooked up by Mike Kean.
We were treated to lovely canopies on arrival, followed by -
β‘οΈ Cuban style pulled pork tacos, with Clabber
β‘οΈ Smoked mozzarella salad
β‘οΈ BBQ beef brisket, milk bread and spice relish
β‘οΈ Baked cheesecake and strawberries
β‘οΈ Chocolate truffle drink with raw cream
All the key components of the dishes was produce from Colletts Farm - incredible to put that menu together and to source it all from the place we ate it.
We learnt what Clabber was (fermented raw milk) and how its made - it tasted incredible and not to dissimilar to feta.
Mike talked to us about his adventures and how important it is to him to eat solely local produce from the area he is in at that time.
The setting was perfect, the kitchen and dining tables were in the field with the dairy cows that supplied us with so much of the food we ate.
The company was fascinating, chatting with various people from different walks of life. I bumped into my cousin who I didn't realise would be there, a lovely surprise π
All in all, a fab evening. An event that showcased what an amazing job this small farm is doing, tucked away in this glorious part of Essex.
I will make even more of a point now to call into their farm shop whenever I am that way, too stock up on their meat and raw milk.
I hope it was a success and enjoyed by the team at Collets - i think it was?! I would love to see more of these events...maybe in east Cambridgeshire sometime....?!
