Just #oinogustus on the BBQ tonight. Oyster Blade (infraspinatus) 2nd tenderest cut on a cow and way more flavour than a tenderloin. Some swanky people make a flat iron out of it but if you breed 'em right the collagen is soluble and adds a seam of gooey goodness in the middle.
