Finally figured out what was nuking Final Cut Pro. Not plugins. Not effects. Just text
It's cool grinding through 500GB of 8K RED RAW files with color correction & transitions, but 7 layers of text on one frame was enough to bring the MacPro to its knees. Tech is weird sometimes
