Sesame cookies
115g salted butter (room temp)
100g caster sugar
40g dark brown sugar
1tsp cinnamon
1 egg
90g tahini
1 tsp vanilla
3tbsp toasted sesame seeds
3tbsp pumpkin seeds
170g self raising flour

-Heat oven to 168°C fan.
-Cream butter and sugar until fluffy.
-Mix in egg, tahini, vanilla, cinnamon sesame seeds and pumpkin seeds.
-Stir in flour.
-chill
-Scoop dough into walnut size balls.

-Bake 10 minutes.
-Press down with spatula or fork and sprinkle with a little sea salt and a few more sesame seeds.
-Bake 2-5 more minutes.
-Allow to cool for 5 minutes before transferring to a cooling rack.
Cook them a little longer if they still look pale
