Yes wild fish and game is full of parasites. Thats the main reason cooking was invented many aeons ago (before spoken language in fact). Fortunately basically all the wild fish you can buy in first world countries has been flash frozen or canned before reaching store shelves or restaurants, both of which destroy parasites. Its a non-issue for consumers
Top 5 most parasite-infested meats:
Wild Salmon: worms in up to 100% of wild-caught fish. Farmed is just 0.11%
Squid: over 80% infected in some species, with larvae burrowing into the mantle (the part you eat)
Mackerel: live larvae in 36% of ready-to-eat products
Freshwater fish (perch, pike, trout, walleye): carry broad fish tapeworm
Wild game: a top source of Trichinella in humans
Parasites are a normal part of nature and are easily killed:
- Cook wild game properly (165°F)
- Freeze your fish (–4°F, 7 days)
