Day off # 2
Good morning
A lot of you wonderful Twits have asked for the recipe of my world famous bacon wrapped meatloaf..
It’s so simple ,
A one bowl wonder ..
So here goes ..
Ingredients..
750g/1lb 10oz lean beef mince
175g/6oz pork sausage meat
16 rashers of streaky bacon
1 egg, beaten
1 medium onion, finely chopped
1 clove garlic, crushed
1 tablespoon sage leaves, chopped
1 tablespoon of parsley
( and some for topping )
1 tablespoon mustard
( I use Dijon)
1 heaped tablespoon tomato purée
110g/4oz fresh breadcrumbs
½ tsp paprika
salt and freshly ground black pepper
(For Gluten free ..as mine is ..
I use gluten free sausages and Gf rolls and blitz them )
1Heat the oven to 180C
2Place all the ingredients in a large mixing bowl and mix thoroughly - it s best to use your hands .
It’s quite satisfying squishing it all together ..🤭

Line a 900g/ 2lb loaf tin with streaky bacon Transfer the mix into the bacon lined tin and pat down until level.
Bring up the bacon and overlap over the top of the mixture ,
tuck the edges in ,
Sprinkle with parsley Cover the top of the mixture with a piece of greaseproof paper.
4Bake in the oven for 1 hour 30 minutes or until the meatloaf is cooked through. (Remove the paper 25 minutes before the end of cooking).
