The skiing sounds were essentially "DJ"-ed live in Wwise - an RTPC controls the pitch/volume to simulate the angle of the skis on snow, and I manually changed the parameter in a Soundcaster session while recording loopback audio to add to the rest of the soundscape.

When working on my team's entry for JPJ2024, I cold emailed an entomologist working for the USDA about his recordings of bug sounds and he responded back with permission and some more great information about bugs and sound! Reach out! People want to share what they know.
