Herdwick Macon Ham (Cumbria) Cure leg of mutton in a mix of sugar, salt, bay leaves, pepercorns & juniper berries for 3 weeks. Cold smoke over oak & juniper. Mature for 8 months.

Dock Pudding (South Yorkshire) Local veg (bistort, nettles, lady's mantle, raspberry leaves, dandelion, etc) chopped onion, simmer in seasoned water for 20min. Add oatmeal, cook for another 20min. Strain & pack in a tin/loaf pan to cool. When cool, slice & fry in bacon fat.

Fun facts: Ham refers to hind legs & is not exclusive to Pork. Macon is a portmanteau of Mutton Bacon. Mutton hams have a long history (as sheep were more common than pigs for much of history)

Hawkshead Wig (Cumbria) Flour, milk (2:1). Bloom yeast in milk. Combine w/ flour pinch salt. Bring together into a dough & knead. Prove 30min. Knock down & knead in softened lard (8 dough:1 lard) caraway seeds. Cut into 40g portions & let rise 15min. Bake 220C 20-30min

Funny thing is that this recipe c. 1800s was poor ppls food. Literally was based on whatever you could forage to survive. Now it sounds like something you'd get on a hyper-local, forage-focused upscale restaurant menu.
