Whisk together ¾ cup flour, 2 tablespoons cornstarch, ¼ teaspoon baking soda, ¼ teaspoon baking powder and ¼ teaspoon salt. Add ¾ cup water and whisk until smooth.
Dip your fish, shrimp or chicken into the batter and fry in oil heated to 350°F for about 3 to 4 minutes until golden and crispy.
The cornstarch is what keeps the shell crispy instead of going soft. That's the part most homemade batters miss.
