Crockpot Buffalo Chicken Tortilla Soup
I don't know which I am enjoying more this year, Buffalo Chicken Season or Soup Season. But really? Winter isn't even here, yet… I am just trying to stay in the game, so to speak. This is a great recipe, it combines both of my favorites! Soup and Buffalo Chicken! I will be honest it has been a cold winter so this will keep you warm too. Add some jalapenos for a kick on top with some tortilla chips for a crunchy garnish.
INGREDIENTS:
2 Chicken Breast (video-I dbl for another recipe)
Salt and Pepper
Garlic Powder
1/2 cup GF Buffalo Sauce (I used
@franksredhot)
2 cups carrots
2 cups celery
2 TB garlic
1 carton GF Chicken Broth

15oz can diced Tomatoes
8oz Cream Cheese
1 box GF spaghetti broken up

Garnish:
Thinly sliced Green Onions
Tortilla chips
Sour cream
Add the chicken breast to a bowl and add salt, pepper, and
garlic powder. Mix well. Add to a preheated
@crockpot Add cream cheese and buffalo hot sauce. Along with chopped veggies and chicken stock. Cover, cook on high for 3 hours or low for 6. Remove chicken and shred either with two forks or my favorite in your standing
@kitchenaid mixer. Add meat back to the crockpot. Add spaghetti to crockpot, and let cook for one hour. (you can boil your noodles and add them faster, just a FYI) Salt to taste, then leave on the warm setting until serving with sliced green onion on top. We served with cornbread. Enjoy!
