When I worked at my first restaurant outside Nigeria, the head chef said on my first day:
“If you have any outside jobs or events to prep for, feel free to use the kitchen before or after hours, just bring your own groceries.”
The Nigerian in me was MIND BLOWN.
Worked a bit more and realised this was pretty standard. As long as you’re respectful and don’t take the piss, no one minded.
I brought that culture back with me. My chefs are free to take outside jobs and prep in my kitchens, with sense.
It helps them grow, earn extra income and stay creative.
