cert-manager can do wildcard certs with the right setup. I liked certmanager, it's very nice, but these days I've just switched to using Cloudflare Origin CA certs since I have my DNS with them anyway. it's less setup than cert-manager

This. Loki for logs if you're so inclined. You can get hosted versions just fine. It's super cheap and if you have a k8s cluster or are willing to use one it's basically setup-costs and just continues, s3 storage, too. We ran it with externaldns and certmanager and lived happy.
