I’m not sure how they did it, but there is a turkey torta place in Mexico City. They cook the turkey in variety of spices. One of the options you can get is turkey Cracklins.. it is a very small and unassuming restaurant. It is one of my favorite eateries anywhere.

This would be way above my pay grade, but I’m wondering what if you were to marinate a small turkey with a hybrid of Chinese and Mexican spice with citrus marinade.. cook it and serve it Beijing duck style.

I would go the other way with fusion. Use the Chinese style wrap, then go with Tex/Mex style fillings... Or shredded smoked BBQ ribs, pulled pork, chili con carne, and dipped in Queso - Hoisin sauce

I see a lot a posts about how CRISPY Peking duck skin has to be, and few about how THIN then wrapping bao has to be. Friends, it should be served hot, and flexible, and look translucent.

For my western friends, apart from an amazingly tasty/crispy skin and delicious sauce, a Peking Duck needs to come with a translucent paperthin wrapper.

You had me at Beijing Duck Tacos But I also noticed their tortillas aren't made in-house I would suggest going the other way and getting a machine that makes the thin skinned wraps for Peking Duck, and using those to wrap tacos Cut costs a LOT, and improve the food.
