Shopping List (Serves 8) Proteins •Paneer, 2 lbs (900g) •Ground pork, 80/20, 1 lb (450g) Sichuan vibes •Pixian doubanjiang, 6 tbsp (1 jar) •Douchi (fermented black beans), 2 tbsp •Whole red Sichuan peppercorns, 3 tbsp •Chinkiang black vinegar, 1 tsp •Shaoxing wine, 2 tbsp •Light soy sauce, 2 tbsp •Dark soy sauce, 1 tsp Asian Mirepoix (Aromatics) •Garlic, 12 cloves (1 large head) •Fresh ginger, 3-inch knob (about 30g) •Scallions, 8 stalks (1 bunch) •Leek, 1 medium Supporting Cast •Chicken stock, 3 cups (720ml) •Cornstarch, 3 tbsp •Avocado oil, 1/3 cup (80ml) •Chili crisp (boomsauce) 2 tbsp •Toasted sesame oil, 1 tsp •MSG, 1/2 tsp (optional) •Sugar, 1 pinch (~1/4 tsp) •Jasmine rice, 4 cups dry (800g) •Roti or naan (Call an Aunty) •Cilantro (1 small bunch (for garnish)
