Really the only thing I’m going to miss is how my sis or mom would make pancit which is de rigeur for birthdays. I’m not spending six hours making that for myself so at least there are two Filipino restaurants in driving distance

Speaking of Filipino food: A lot of the dishes that are huge hits at potlucks that Americans hoover up (and many times leave half-eaten and discarded) take long hours to make. Pancit is a six hour ordeal for a noodle dish. Lumpia takes time to manually roll. If I ever make our food to share it’s one-pot dishes that take fifteen minutes to put together and an hour to simmer

If a person said to me "I want to move to rural America" I would tell them to locate near a college that is likely to survive. Property won't really be all that more expensive than otherwise, and it will be 100x easier socially. You probably don't want "real" rural America!
Collegetows are America's truly unique and superior life environments, specially for full-grown adults. Not NYC. So many people that are miserable trying and failing to make it in NYC would be so much happier in Ithaca.

Most mass-produced cheddar globally (not just in the US) is made using the stirred-curd method, which automates agitation to expel whey rather than stacking curd blocks. I’m not a big material possessions guy, but I am a snob about lakes. Growing up on Lake Michigan and the inland lakes of Northern MI has ruined me. I need clear turquoise water and a sandy bottom. Most US lakes are brown, murky, and full of seaweed. No thanks.
