Chicken Cordon Bleu
Ingredients
โข 4 boneless, skinless chicken breasts.
โข Salt, to taste.
โข Pepper, to taste.
โข 1 tablespoon garlic powder.
โข 1 tablespoon onion powder.
โข 16 slices Swiss cheese.
โข ยฝ lb ham, thinly sliced.
โข Peanut oil or vegetable oil, for frying.
โข 1 cup all-purpose flour (125 g).
โข 4 eggs, beaten.
โข 2 cups panko bread crumbs (100 g).
โข Creamy Dijon Sauce.
โข 3 tablespoons butter.
โข 2 cloves garlic, minced.
โข 3 tablespoons all-purpose flour.
โข 2 cups milk (480 mL).
โข ยผ cup Dijon mustard (60 g).
โข 1 cup shredded Parmesan cheese (100 g).
โข Salt, to taste.
โข Pepper, to taste.
Instructions:
1. Prep the Chicken:
- Place each chicken breast between two sheets of plastic wrap. Gently pound with a meat mallet or rolling pin until about ยฝ inch thick.
2. Season the Chicken:
- Season both sides of the chicken breasts with salt, pepper, garlic powder, and onion powder.
3. Assemble the Cordon Bleu:
- Lay out 8 slices of Swiss cheese and ยฝ of the ham slices on each chicken breast.
- Roll up each breast tightly, securing with toothpicks if necessary.
4. Dredge and Bread the Chicken:
- Set up a breading station: Place the flour in one shallow dish, the beaten eggs in another, and the panko bread crumbs in a third.
- Dredge each chicken roll in flour, shaking off excess, then dip in the beaten eggs, and finally coat with panko bread crumbs, pressing lightly to adhere.
5. Fry the Chicken:
- Heat oil in a large skillet over medium heat. There should be enough oil to cover the bottom of the pan.
- Fry the chicken rolls in batches, turning occasionally, until golden brown and cooked through (about 8-10 minutes per side). Transfer to a paper towel-lined plate to drain.
6. Prepare the Creamy Dijon Sauce:
- Melt 3 tablespoons of butter in a saucepan over medium heat. Add minced garlic and sautรฉ until fragrant (about 1 minute).
- Stir in 3 tablespoons of flour, cooking for about 1 minute to form a roux.
- Gradually whisk in the milk, continuing to whisk until the mixture is smooth and begins to thicken.
- Stir in the Dijon mustard and shredded Parmesan cheese. Cook until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste
