Also came across an intriguing stall making cookies from crickets! Each cookie has 30 crickets (currently sourced from Europe) ground up to make 10% of the mix. Crickets use fewer resources and offer same gram for gram protein as beef. Surely a no-brainer for sustainable eating.

Interesting line in here from produce traders at Covent Garden who voted Leave and seem to be the only ones with any optimism about impact of Brexit on food industry. Majority view seems to be ‘halted investment, shifted production, uncertainty’. Great piece by @jayrayner1.
