Ingredients:
1 cup whole hazelnuts (toasted & skins removed)
1 ½ cups Medjool dates (pitted)
3 tbsp cocoa powder
1 tsp vanilla extract
A pinch of sea salt
Optional: 1 tbsp hazelnut butter
For the coating: ½ cup finely chopped roasted hazelnuts
Method:
1. Whiz your hazelnuts in a food processor until coarsely chopped. Remove 2 tbsp for the topping and set aside.
2. Add your dates, cocoa, vanilla, salt, and hazelnut butter to the processor.
3. Pulse until a sticky dough forms. If it's a bit dry, add a splash of warm water.
4. Roll the dough into bite-sized balls using your hands.
5. Coat each ball in the reserved chopped nuts for that signature crunch.
6. Chill in the fridge for 30 minutes to firm up. Enjoy!
