Whenever I talk about adulteration in paneer or how we’re being sold fake analogue paneer, people ask us... what do we do instead? Who do we trust?
While you can buy packaged paneer from trusted brands and read labels carefully, the best paneer will always be the one you make at home.
So here’s a simple recipe for you:
Recipe for Homemade Paneer (Using Lemon Juice)
Ingredients
-1 litre milk
-Juice of 1 lemon
-2 tbsp water
Method
1.Bring milk to a gentle boil.
2.Add diluted lemon juice slowly while stirring.
3.Once milk curdles (greenish whey separates), turn off the flame.
4.Strain through a muslin cloth and rinse with cool water.
5.Hang for 30 minutes to drain extra water.
For firm paneer, press under a weight for 1–2 hours.
✅ Storage: Refrigerate and use within 2–3 days.
💡 Tip: The leftover whey is rich in digestive enzymes- use it in dals, soups, or dough.
