Treat like a steak. Slow roll smoke @ 225° till 110° internal.
Turn up temp 500° or on a cast iron and sear.
You’re a medium guy I think? Hope not but this works for med rare. Add a bit if needing medium.
Most important part: cut ACROSS the grain.
