Ingredients:
For the Salmon Meatballs:
1 lb fresh salmon, skinless and chopped finely π
1/2 cup panko breadcrumbs
1 egg, lightly beaten π₯
2 tbsp fresh parsley, chopped πΏ
2 garlic cloves, minced π§
1/2 small onion, finely diced π§
1 tsp Dijon mustard
1 tsp lemon zest π
Salt & pepper, to taste π§
For the Creamy Avocado Sauce:
1 ripe avocado, peeled and pitted π₯
1/2 cup Greek yogurt
1 tbsp lime juice π
1 garlic clove, minced π§
1 tbsp olive oil
Salt & pepper, to taste π§
Fresh cilantro, for garnish πΏ
Directions:
Preheat the oven:
Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the salmon meatballs:
In a bowl, combine salmon, panko breadcrumbs, egg, parsley, garlic, onion, Dijon mustard, lemon zest, salt, and pepper. Mix well until the ingredients are combined.
Shape the meatballs:
Form the mixture into small meatballs (about 1 1/2 inches in diameter). Place them on the prepared baking sheet.
Bake the meatballs:
Bake in the preheated oven for 12-15 minutes, or until the meatballs are cooked through and lightly golden.
Make the avocado sauce:
