People will say this and then defend Tatooine (a desert planet), Yavin (a jungle planet), Hoth (an ice planet), Endor (jungle but different), and so on.
It’s not so much the environment that’s important as it is what you do with it.
Dan Gilroy's imagination is limited so his idea of unique planets is just "oh here's the Scottish Highlands" or "here's a planet full of wheat." This isn't a problem unique to him as all of Disney's Star Wars has it but it showcases a creative bankruptcy across the board.
