A 3-Day Workshop on “Plant Protein Extraction, Modification, and Manufacture of High Moisture Meat Analogue”, sponsored by the Biotechnology Industry Research Assistance Council (BIRAC), New Delhi, was successfully organised by the Department of Food Process Engineering, NIT Rourkela, from 9–11 February 2026. The workshop witnessed the participation of 25 attendees, including startup representatives, research scholars, and students.
The workshop was inaugurated by Prof. Anindya Basu (Dean, Faculty Welfare, NIT Rourkela) in the presence of Prof. Sabyasachi Mishra (Head, Department of Food Process Engineering, NIT Rourkela), Dr. Amita Joshi (Deputy General Manager, Technical Group Lead, BIRAC, New Delhi), Dr. Sujit Das (Deputy Manager, Technical Division, BIRAC, New Delhi), Prof. Rama Chandra Pradhan (Coordinator), Prof. Madhuresh Dwivedi (Coordinator), and Dr. Chandrakant G. Dalbhagat (Coordinator).
The workshop focused on technical and hands-on sessions covering the fundamentals of plant-based meat analogues, plant protein extraction and characterisation, protein modification techniques, ingredient selection and formulation for high moisture meat analogues (HMMA), processing equipment and manufacturing method, as well as quality, safety, packaging, and storage aspects. The experts from academia and industry such as Prof. H N Mishra (IIT Kharagpur), Dr. Nithya A (The Bland Company, Mumbai), Dr. Swasti Mudgal (TDU Bangalore), Dr. Rakesh Kumar Raigar (CAEPHT, CAU, Sikkim) and Dr. Poulami Sarkar (IIP Kolkata) delivered technical lectures and conducted hands-on practical sessions. Participants performed experiments using equipment and instruments such as a twin-screw extruder, rheometer, powder flow tester, texture analyser, packaging, and other processing and analytical tools. The participants gained valuable insights into HMMA product development, processing machinery, and instrumentation required for HMMA manufacturing.
